"In affluent societies, we throw away nearly 40% of food. A significant part of this happens in households, and a large part of individual waste production is related to the packaging of our food. This is an area where our individual, everyday decisions definitely matter! That's why I dreamed of a book that will help you with everything from shopping preparations to proper storage to replacing disposable kitchen utensils.
I draw inspiration from old family recipes, but also from the relationship with food and traditions of the nearly 100 families I met during my travels. The recipes are enriched by the creations of guest chefs I highly value, and the dishes are immortalized on plates by local ceramic artists. By writing the book, I follow the cycle of nature for a year and work with wonderful people who follow this lifestyle themselves."
